Hi, Dan. Thank you for your insights and comments. I have one thing I like to do, not sure i9f you’d call it a desert or not but I call it a treat since I don’t indulge very often. As a kid growing up my mother used to make these wonderful pancakes but afterwards I always felt like I’d ate a cement block. They tasted great going down but that night and the next day I swear I put at least 5 pounds on. Maybe 10. And becoming a diabetic left me having them less and less. I missed them so much I did some of my own experimenting. I put a heaping tablespoon of protein in them now and use Smuckers sugar free breakfast syrup-no more cement block feeling. I’ve put some in a cake I made at Thanksgiving and it was delicious. I made cookies without, took both to the neighbors and asked them to tell me which had protein and which didn’t. No one could tell, all guessing the cookies. Out of 11 people, not a one guessed right.
